A transformation is taking place in Spanish wine. In a setting known for a heavy hand in the cellar and the overpowering impact of oak, a new movement, propelled by progressive winemakers, represents another path. One showcasing limited winemaking intervention and rooted in respect for the land and local, ancient varieties.
Call it new, but this process is actually old school. More commonplace in France, Italy, and even parts of the US, it’s fantastic to see this philosophy emphasized in Spain as well. And it’s not just at the wineries. Wines in this small production style are popping up as top picks in all the top wine bars and restaurants in Barcelona, Madrid, San Sebastian and Valencia.
